French margarine, from acide margarique (margaric acid), from Ancient Greek μάργαρον (pearl), in allusion to its pearly lustre, with the suffix -ine, influenced by glycérine (glycerine). French chemist Michel Eugène Chevreul named margaric acid after its pearl-like crystallization.
